This coffee is brought to us by the Francisca Chacon and her husband Oscar. This family are experienced farmers that have been growing coffee on their land for over 80 years. This lot, from their farm Las Lajas is located within the Central Valley, where the land is rich in Volcanic soils perfect for coffee plantations. The Chacon family like to experiment with different coffee processing methods, and the science of natural fermenting. This black honey processed coffee is an example of their skill in perfecting honey-processed coffees. This process follows the method where fruity-pulp called millage, remains around the coffee beans, naturally fermenting as they dry out. This process allows the nutrients and naturally occurring sugars to permeate the inner coffee beans, creating a coffee with complex fruit-forward characteristics.
